Daily Recipe: Energy Bites

leave a comment »

Did you know that an estimated 38.4 million people will be traveling for Thanksgiving this year? Which means that many of you are probably preparing yourself for a long drive (or plane ride) to visit your loved ones.

Traveling without snacks can be stressful. It leads to pit stops and food choices you later regret. No one wants to show up at a relative’s house, full on junk food, not able to fully enjoy the delicious Thanksgiving food.

Today’s recipe is a solution to the problem. These energy bites require only a few healthy ingredients, and are the perfect size to tuck away in your bag for when the hunger hits. The recipe can also be adjusted depending on personal preference. Not a fan of dried apricots? Try dried cherries or dates. Not a fan of rolling them in coconut? Toss them in sesame seeds.

What really makes these a worthwhile snack is the fact that they taste like dessert. It could be the added cocoa powder or the sweetness of the dried fruit, but these snacks are like eating a truffle. Any health food that can pass itself off as dessert is a food we can get behind.

Happy eating!
