Daily Recipe: Perfect Guacamole

The entire city is getting ready for SXSW. We’re getting prepared for our own in.session recording and music on the porch.

This city is about to get crazy.

SXSW means it’s time to get ready for a slew of new faces and endless parties. Perhaps your party involves staying inside and avoiding driving at all possible costs (we understand) or you may have out-of-town visitors that want to see the town.

Whatever your SXSW schedule looks like, you’ll need to stock up on food and make your out-of-town friends and family some good food. That’s why we’re going with guacamole.

This is easy to make, delicious and fills you up. We have local corn tortillas so you can make your own corn chips and growlers to fill with local beer. Ice cold beer, homemade chips, guacamole AND live music? Yeah, your friends will want to move here.

The Perfect Guacamole Recipe

From: Simply Recipes

  • 2 ripe avocados
  • 1/2 onion, minced (about 1/2 cup)
  • 2 Tbs cilantro (leaves and stems), finely chopped
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp coarse salt
  • A dash of black pepper
  • 1/2 ripe tomato, seeds and pulp removed, chopped

Cut avocados in half. Remove seed. Scoop out avocado from peel, put in a mixing bowl. Using a fork, roughly mash the avocado. Add the chopped onion, cilantro, lemon, salt and pepper and mash some more. Chilling tomatoes hurt their flavor, so don’t chop the tomatoes or add to the guacamole until ready to serve. When you are ready to serve the guacamole, chop up the tomato and add it to the guacamole and mix. Enjoy!
